‘Oli de Mallorca’ has been marked with a Protected Designation of Origin since 2002, standing out for its quality and singular properties thanks to its geographical setting and the age-old knowledge of local producers. This extra virgin olive oil captures the spirit of the island, offering flavours that vary from mild sweetness to intense fruitiness depending on when the olives are harvested.

Mallorcan olive oil is more than just an ingredient; it is cultural heritage that links the island’s past with its present. With roots dating back to the arrival of the Phoenicians and Greeks, this oil has been produced with dedication and expertise passed down through generations. Since 2002, the mark of the Protected Designation of Origin has recognised its exceptional quality, achieved thanks to the specific geographical conditions and a fusion of tradition and modernity.

In Mallorca, olive oil is produced using traditional methods combined with modern technology. The olive trees, some of which are more than 500 years old, grow in limestone soils in an ideal Mediterranean climate. The olive varieties used include Mallorquina, Arbequina and Picual, each contributing unique characteristics to the oil. The oil can, therefore, vary from a fruity profile with bitter and spicy notes, to a sweet and smooth profile depending on the ripeness of the olives at the time of harvesting.

The fruity oil comes from green olives and is known for its fresh aroma, bitter and spicy notes, and greenish-yellow colour. On the other hand, the sweet oil comes from olives in veraison. Its sweetness and smoothness are its predominant properties, and its colour varies from straw-yellow to golden-yellow.

The quality of Mallorcan olive oil is guaranteed by the Regulatory Council, which ensures that each bottle is labelled with the quality seal and a Protected Designation of Origin registration number. This control system ensures the authenticity and high quality of the product.

The landscape dotted with Mallorcan olive groves is another of the island's treasures. The terraces of Tramuntana mountain range are lined with olive trees overlooking the sea, creating a magical setting that not only produces exceptional oil, but also offers a truly special experience for those visiting the local mills.
