Winemaking tradition and excellence in the heart of Mallorca
Binissalem, located in central Mallorca, produces the cherished Binissalem PDO wine that combines centuries of tradition with modern techniques. Since its official recognition in 1990, this region has stood out for its wines of outstanding quality, produced in a prime setting, protected by the Serra de Tramuntana mountain range. With the ideal Mediterranean climate and unique limestone soils, Binissalem offers an exceptional food and wine experience.
Binissalem’s winegrowing history dates back to Roman times, when grape growing began to flourish in the region. Over the centuries, winegrowing has faced challenges such as phylloxera in the 19th century and the Spanish Civil War, but has made a strong comeback, especially since the 1980s.
The geographical area of the Binissalem PDO includes towns such as Santa Maria del Camí, Consell, Binissalem, Santa Eugènia and Sencelles. This plain, surrounded by high ground, provides the perfect microclimate for winegrowing thanks to the protection of the Serra de Tramuntana mountain range.
The permitted grape varieties in Binissalem include Manto Negro, Callet, Tempranillo, Monastrell, Cabernet Sauvignon, Merlot, Syrah/Shiraz and Gorgollassa for reds, and Moll/Prensal Blanc, Parellada, Macabeo, Muscat of Alexandria, Muscat Blanc, Chardonnay and Giró Blanc/Giró Ros for whites. These varieties, especially the native ones, are perfectly adapted to the climate of the area.
Binissalem wines are known for their distinct sensory characteristics. The reds, made mainly with Manto Negro, offer medium colour intensity, ripe red fruit aromas and a balanced structure on the palate. The whites are characterised by their fruity aromas and freshness. The rosés are bright and clean, with primary aromas of red fruits.
Quality control is strict, with audits and analysis carried out by the Regulatory Council. Only wines that meet strict standards can carry the Binissalem PDO label, guaranteeing their excellence.
Since its recognition in 1990, the Binissalem PDO has achieved outstanding ratings for its vintages, with ‘Very Good’ and ‘Excellent’ ratings for several years running. This recognition marks Binissalem’s ongoing commitment to quality and traditional winemaking, firmly establishing its reputation in the world of wine.
