Protected Designation of Origin ‘Mahón-Menorca’ Cheese

Designation of origin

Authentic Menorcan Flavour

Mahón-Menorca cheese, with Protected Designation of Origin since 1985, is a staple of Menorcan cuisine. Made exclusively on the island from cow’s milk, this round, pressed cheese stands out for its intense, unmistakable flavour. The geoclimatic conditions, coupled with traditional production and curing techniques, give it special characteristics that are appreciated by all lovers of good cheese.

Mahón-Menorca is more than just a cheese; it is a core part of Menorca’s culture and history. Since it was awarded the Protected Designation of Origin in 1985, extended in 1998, this cheese has been recognised for its quality and close connection with the island. Mahón-Menorca cheese is made through traditional methods, using milk from Menorcan cows and ancient techniques that have been passed down from generation to generation.

Mahón-Menorca cheeses are divided into two main types: cheese made with pasteurised milk and artisan cheese made with raw milk. Both go through the same basic process, but with minor differences in detail that impact on the final taste and texture. Artisan cheese, moulded by hand with a cotton cloth known as a fogasser, acquires a more rustic shape and a particular texture, while pasteurised cheese undergoes more standardised techniques.

The maturing of Mahón-Menorca cheese is very specific, involving several rounds of flipping and rubbing with olive oil and paprika to give it its distinctive orange colour and characteristic flavour. These cheeses are known for their complex flavours and aromas that echo the wind, humidity and sunlight in Menorca.

The Menorcan landscape, with plots of land bordered by dry stone walls, is ideal for grazing cows, which enhances the unique flavour of the cheese. The island is a UNESCO Biosphere Reserve, offering the perfect environment for making a cheese that tastes delightful while also respecting biodiversity and local traditions.

The history of cheese in Menorca dates back to prehistoric times, with evidence of it being produced as far back as 2000 BC. Historical documents and literary references demonstrate the importance of cheese to the island’s economy and culture. Over the centuries, Mahón-Menorca cheese has been acclaimed both locally and in international markets, gaining fame as one of the best cheeses in Spain.

Today, Mahón-Menorca cheeses can be enjoyed at their best thanks to the dedication of the producers who keep the tradition alive. Whether in a local restaurant, a cheese shop or on a tour of the island’s cheese dairies, tasting this cheese will connect you to the very heart of Menorca.
