Biniatzem, in Es Migjorn Gran, produces artisan DOP Mahón-Menorca cheeses using traditional and sustainable methods. Their semicurado cheeses, made with raw cow's milk, stand out for their mild flavour and creamy texture, the result of free-range cows. Also, 50% of the energy used in their process comes from renewable sources, reflecting their commitment to quality and the environment.

In the heart of Menorca, Biniatzem combines traditional cheesemaking with sustainability in each of its products. Specialising in DOP Mahón-Menorca cheeses, the estate makes semicurado (medium mature) cheeses using raw cow's milk, creating a product with an exquisite flavour and creamy texture, perfect for pairing with a good wine.


Biniatzem is more than just cheese factory: it is a model of responsible management. Their cows graze according to an extensive farming system, feeding on pastures sown on the estate, while 50% of the energy used in production comes from renewable sources. Moreover, their facilities respect and protect the archaeological sites that exist on the property.


Their cheeses can be bought from their farm, from shops such as Ca Na Fayas in Ciutadella, or from certain hotels. Matured for 2 to 5 months, its semicurado cheeses represent tradition and commitment to the Menorcan environment. Each bite of Biniatzem contains the essence of the island.
