Son Caravinya, in Ciutadella de Menorca, is a family farm that has been making DOP Mahón-Menorca cheese and traditional sausages for more than 25 years. With 130 Friesian cows on land by the sea, they take care of every little detail to keep their products authentic, made according to artisan methods and respect for the island's cheesemaking legacy.
At the Son Caravinya estate (‘lloc’ in Menorcan), located in Ciutadella de Menorca, two generations of a Menorcan family work hard every day to keep the island's cheesemaking tradition alive. What started with just 12 cows for producing milk has grown into a farm with over 130 Friesian cows, grazing on land that is carefully managed to achieve the best quality milk. This raw ingredient becomes DOP Mahón-Menorca cheese, made in line with traditional processes passed down through generations.
Made from raw cow's milk and shaped by hand with the traditional fogasser moulding cloth, Son Caravinya’s cheese is made in the following varieties: semicurado (medium mature) curado (mature) and añejo (extra mature). Each cheese is pressed, salted in brine and undergoes an ageing process in which the rind is carefully treated with olive oil to create its distinctive texture and flavour. This results in a cheese that represents the true spirit of Menorca, from pastures to palate.
As well as cheese, Son Caravinya produces traditional sausages such as sobrassada and carnixua, using meat from pigs reared on the farm. All their products can be purchased in the shop inside the farmhouse itself, where visitors can learn about the cheesemaking process and enjoy family hospitality.
