Sant Patrici makes its DOP Mahón-Menorca cheeses using an artisan process that combines Menorcan tradition with careful methods of ageing in cellars. Sant Patrici cheeses are truly representative of Menorca's cheese-making tradition, protected under the DOP Mahón-Menorca label since 1986. Made from cow's milk and moulded into a square shape with rounded edges, these cheeses range from 1 to 4 kg and come in three varieties: tierno (mild), semicurado (medium) and curado (mature) depending on the ageing time. Left to mature in cellars for a minimum of 20 days and up to a year, the cheeses develop their characteristic colour, ranging from ivory to dark brown, and a unique flavour with salty, tangy and slightly spicy notes.
This meticulous artisan process, handed down through the generations, is possible thanks to the expertise and dedication of the master cheesemaker, who uses modern technology while respecting traditional tools and methods. The result is a DOP Mahón-Menorca cheese with an authentic flavour that truly represents the island and reflects its particular microclimate. Menorca’s conditions, with heavy night dew and the Mediterranean climate, provide the pastures with quality grass. The cows then feed on this grass, meaning the very atmosphere of Menorca can be tasted in the cheese.
