At the Santa Catalina farm, located in the stunning setting of the S'Albufera des Grau Nature Park, DOP Mahón-Menorca cheese is brought to life through traditional methods and dedication. With protected cheese caves and a deep respect for the environment, each cheese is a Menorcan work of art.
Santa Catalina, also known as Santa Caterina de Dalt, is a farm surrounded by oak trees and the extraordinary scenery of S'Albufera des Grau Nature Park. Here, Josué Martí Guardia and Ester Camps Triay turn raw cow’s milk into authentic DOP Mahón-Menorca cheese, aged in a traditional protected cheese cave (a ‘païsa’), thus preserving a tradition that goes back centuries.
They make cheese according to an artisan process that includes using a traditional fogasser to mould the cheese, and a natural ageing process in ventilated caves. The cheese spends months being turned and rubbed with oil and paprika to develop the flavour, texture and rind that distinguish them. Varieties include semicurado (medium mature), curado (mature) and añejo (extra mature), each with their own nuances and the delicious taste of the Menorcan countryside.
As well as cheese, Santa Catalina offers artisan sausages such as sobrassada, chorizo and carnixua, made from pigs reared on the farm that are fed with whey from the cheesemaking process. Santa Catalina is not just a place where cheese is made: it is a tribute to the countryside, caring for livestock and Menorca's culinary heritage.
