At Quesos Quintana, the art of refining has been perfected for more than a century. With roots dating back to the 1940s, Quintana has dedicated itself to selecting the finest Mahón-Menorca cheeses and maturing them carefully, following an artisan process that goes back generations. Each piece is the result of a deep respect for tradition and meticulous efforts to achieve the authentic taste of Mahón-Menorca cheese.
At Quesos Quintana, cheesemaking is an art fuelled by dedication and sensitivity. The master affineur, with a keen ear and unrivalled passion, carefully selects each fresh cheese to begin the maturing process in wooden cellars. In line with a tradition that goes back over a century, Quintana doesn’t just make cheese, but seeks to create the ‘perfect symphony’ of flavours and aromas to achieve the authentic essence of Mahón-Menorca cheese.
Since being founded in the 1940s by the Florit Camps family, Quintana has remained focused on quality and innovation. In the 1960s, the company grew and was later taken over by the Triay Barber family in 2002, keeping this artisan tradition alive. Cheese refining is a process that only a few master. Here, it is carried out with great care: the pieces are turned and spread with oil and paprika by hand. Every detail is closely monitored, from temperature to humidity, to enhance the nuanced flavours and achieve a final product of unmatched quality.
Quintana cheeses, available as semicurado (medium mature), curado (mature) and añejo (extra mature), have been carefully selected and refined to create a range of intensities and flavours that represent authentic Mahón-Menorca cheese. Each piece is a journey for the senses, inviting you to savour the long-standing tradition and expertise behind Quintana, which continues to set the standard of excellence.
