In Colònia de Sant Jordi, Panadería Pons bakes much more than just daily bread: it bakes history. Since 1967, this family bakery has been committed to artisanal methods, long fermentation and sourdough, keeping the soul of the island’s traditional bakeries alive.
They make organic chaja bread, cremadillos, rubiols and savoury coca bread, but it’s their ensaïmadas that really draw people in from all over Mallorca. Filled with cream, sobrassada, chocolate or angel hair, each one needs a whole day to be prepared and rests for 12 to 16 hours before going into the oven.
