Son Simó Vell is a traditional Mallorcan estate with 40 hectares of land, located in the north of the island. With external architecture that brings the rural setting into harmony with open, minimalist interior spaces, this place offers a one-of-a-kind food and wine experience. Here they make wines such as ‘Pecat’ as well as extra virgin olive oil, surrounded by Talayotic remains over 3,000 years old, almond trees, century-old oak trees and orange trees. In 2003, this estate mesmerised its current owners, who decided to make it the heart of their new family winegrowing project.
Son Simó Vell’s beauty and balance with nature will instantly take your breath away. The estate is home to a small craft winery, equipped with the latest technology, where high-quality wines are made. The vines, planted in a 1.5 hectare plot, grow noble grape varieties such as Merlot, Cabernet Sauvignon and Syrah, cultivated with care and respect for the environment. In September, the harvest takes places by hand, with each bunch carefully selected.
Fermentation is carried out under controlled temperatures, followed by ageing for 18 months in French oak barrels, without pressing or filtering. This handcrafted process gives life to the cherished ‘Pecat’ wine, which is left to age in the bottle for more than three years before being ready to enjoy, under the ‘Vi de la terra Mallorca’ indication.
