Designation of Origin Cheeses from the Ciutadella Countryside

On Santa Barbara farm, cows graze freely from before sunrise. Every detail is taken care of: from fodder to the ageing room, and from milking to cheesemaking. Since 2022, they have been making their own Mahón-Menorca cheese from raw milk, in the varieties of fresh, curado (mature) and semicurado (medium mature). This is a modern cheese factory with deep roots in Menorca's livestock farming tradition.

On Santa Bárbara farm, cheesemaking is not just a trade, but a way of life. From the Ciutadella countryside, the team works from sunrise to sunset to obtain clean, rich, balanced milk. The cows are perfectly cared for and well fed, grazing freely on an almost perfectly green pasture, and are the stars of the show. In 2022 the farm released the first batch of its own cheese under the ‘DOP Mahón-Menorca’ label. Each block is handled by expert hands and rests in the ageing room, always in line with traditional ageing times and processes to achieve the classic texture.


The medium mature cheese is a favourite. They also make fresh cheese, ideal for those looking for a smooth, milky texture with a hint of salt. And for those who prefer a richer cheese, they offer mature wedges and blocks that capture the essence of Menorca. Santa Bárbara sells its cheeses in specialised shops and also takes orders. Attention to detail and respect for the natural environment make this cheese factory a benchmark for the new generation of artisans on the island.
