Xaloc: Where Tradition Meets Innovation

Christina Schallock has been in love with Mallorca since the 1990s, and founded Xaloc winery in an idyllic corner of the island. With seven hectares of land, three of which are used for growing grapes, Christina has created fine wines using varieties such as Cabernet Sauvignon, Merlot, Syrah, Chardonnay and Sauvignon Blanc. Her approach combines tradition and advanced technology to produce exceptional wines in small quantities, with quality guaranteed in every bottle.

Christina Schallock came to Mallorca in the 1990s and was captivated by its landscapes. She decided to acquire seven hectares of land and, with the help of experts, started growing grapes on three of them. Grape varieties include Cabernet Sauvignon, Merlot and Syrah for red wines, and Chardonnay and Sauvignon Blanc for white wines. These wines bear the ‘Vi de la Terra Mallorca’ quality seal. 


Initially, her idea was to collaborate with local producers, but quality requirements led her to create her own winery. With a small yet modern facility, Christina personally oversees the entire winemaking process, from manual harvesting to temperature-controlled fermentation. 


At Xaloc, every detail matters. The grapes are harvested by hand, ensuring they are of the best quality. Fermentation takes place in stainless steel tanks, while red wines are aged in specially selected oak barrels. This meticulous process guarantees exceptional wine, with up to 18,000 bottles produced every year, each glass promising a unique experience.
