Located in northeastern Mallorca, Can Axartell is a winery that merges winegrowing tradition with modern, sustainable methods. The estate, steeped in over 800 years of history, is unusual for its use of the Gravetat Method, a winemaking process that avoids pumping, thus preserving the natural aromas and flavours of the wine. Can Axartell, located near Pollença, is one of the most advanced wineries in Mallorca. The estate, which has vineyards that date back to the reconquest in 1229, was restored with respect for its surroundings and traditions. In 2012, a modern winery was built in an old quarry, harnessing the force of gravity in the winemaking process. This method, known as the Gravetat Method, avoids using pumps, thus ensuring that the wines preserve their natural aromas.
At Can Axartell, the grapes are harvested by hand and meticulously classified before fermenting without pumping, in a process that brings out the native flavours of varieties like Callet and Premsal. In addition, the estate collaborates with the University of Illes Balears in research on local varieties.
Since the first batch was bottled in 2013, Can Axartell has gained recognition on the island and internationally, offering wines that represent the richness and diversity of Mallorca.
