Son Jover

A Thousand Hectares, A Thousand Flavours: Son Jover's Signature Cheese

The Son Jover estate in the Mallorcan countryside turns milk from its own herds into artisanal cheeses with character. The farm has been run by the Seguí family for generations and produces 100% organic products from native breeds such as the Mallorcan red sheep and the Malaga goat. This results in soft, rich cheeses that are always true to their origin.

At Son Jover, the life of cheese starts in its own fields that offer a thousand hectares for grazing, with seven hours a day of free roaming for the herd, followed by a meticulous artisanal production process. The farm, located in Inca, is committed to local products and ingredients, as well as to protecting the land.

Son Jover has been producing organically since 1992. All the milk comes from its own farm, without any mixing. The flock is made up of more than 500 Mallorcan red sheep and 100 Malaga goats, reared under an environmentally-friendly and sustainable farming model. Each cheese, whether fresh, semicurado (medium mature), curado (mature) or Gran Reserva (extra mature), reflects the daily work of a committed team. In 2021, its mature sheep's cheese was awarded the bronze medal at the World Cheese Awards.

As well as cheese, it makes other products such as organic yoghurt, kefir, cottage cheese and preserves. You can book to visit the factory to learn about the production process and try these products.
