On the road that connects the town of Campos with Colònia de Sant Jordi, in the heart of rural Mallorca, Formatges Burguera turns milk into cheese including fresh, semicurado (medium mature), curado (mature) and cottage cheese. Three generations of farmers have perfected a traditional production process in their own factory, where the Friesian cows are cared for with love and respect.
Sebastià and Jaume Burguera have stood the test of time. Heirs of a dairy founded almost a century ago, today they run a cheese factory where each cheese is made on their farm using milk from their own cows, without middlemen or shortcuts. The secret behind Formatges Burguera lies in the land: they grow their own fodder, milk cows using a robot and adjust the feed based on tests performed on the milk. This ensures they achieve a quality raw ingredient, free of preservatives and colouring agents, which is then turned into a soft, buttery, low-salt cheese.
Their most popular cheese is fresh cheese, which is delivered freshly made. But they also make medium mature cheeses aged up to 60 days, mature cheeses aged for five months and extra mature cheeses that rest for over a year. Formatges Burguera is one of the few places in Mallorca that still oversees the entire process, from sowing the seeds for fodder to cheesemaking.
