Binigarba’s cheeses are a real tribute to the essence of Menorca, an island declared a Biosphere Reserve by UNESCO. On this historic farm in Ciutadella, cheese is made from the milk of local cows, following traditional, artisan methods. The strong, characteristic flavour of the Menorcan breeze and landscapes can be tasted in every wedge, half or whole piece.
Binigarba's DOP Mahón-Menorca cheeses are the result of a thousand-year-old tradition, still respected in every stage of the production process. Square in shape with rounded edges, these cheeses capture the island’s spirit, nurtured by the wind, humidity and sunlight so typical of Menorca, declared a Biosphere Reserve. This combination of natural factors gives the cheeses their special, intense and unmistakable flavour, making them one of the island's most loved food products.
Located in Ciutadella, the Binigarba farm began its cheese-making activity in 1967. Today, it has a herd of more than 150 Friesian cows that graze on its 74 hectares of farmland. The milk they produce is the core ingredient in two types of DOP Mahón-Menorca cheese: cheese made with pasteurised milk and artisan cheese made with raw milk, then moulded with a traditional cloth called fogasser. Both are made in line with the Protected Designation of Origin requirements, ensuring each piece truly reflects Menorcan expertise.
