From Farm to Table: The Artisan Cheese of Alcaidús in Menorca

In Menorca, the Alcaidús cheese factory produces Mahón-Menorca, a cheese with the DOP label (Protected Designation of Origin), combining age-old traditional techniques with modern technology. With more than 270 hectares of land and 320 Friesian cows, Alcaidús ensures sustainable, artisan production that respects the environment. A family legacy of more than 100 years that offers cheeses with a mild, authentic flavour, ideal for lovers of good food.

Located between Mahón and Alaior, the Alcaidús estate is one of the largest livestock farms in the Balearic Islands. On its 270 hectares, Friesian cows are fed on local grass and grain milled in the farm's own mill, ensuring the milk is fresh and high in quality. Every day, this milk is turned into Mahón-Menorca cheese, with a milder flavour than usual, much appreciated by their customers. 


The cheese factory, which sits next to the milking parlour, produces both raw and pasteurised milk cheeses. Each block matures slowly at Alcaidús, following a traditional technique that goes back thousands of years, combined with modern technology. 


Its cellar-aged cheese is a top favourite due to its strong flavour and unique characteristics. From Alcaidús, the cheeses are packaged and sent directly to their destination to ensure maximum freshness and quality. Menorca's cheese-making history comes through in every bite of each product made on this family farm, which is committed to animal welfare and sustainability.
