Mel d’Eivissa is a delicacy produced by bees from the nectar of flowers specific to the island of Ibiza. The bees drink this nectar, convert it, combine it with chemicals they produce themselves, deposit it, dehydrate it and ripen it in the cells of the hive panels, resulting in honey of superior quality.

Mel d’Eivissa is made from collecting the nectar of wild flowers specific to the island. The bees turn this nectar into honey, creating a multi-floral product made from the pollen of botanical species such as Fabaceae, Boraginaceae and Cistaceae.
The characteristics of Mel d’Eivissa vary according to the harvesting season. Spring-harvested honey includes pollen from Psoralea bituminosa L. (pitch trefoil) and similar shrub-like grasses, while autumn honey contains pollen from Ceratonia siliqua (carob) and Erica multiflora (heather). These seasonal variations further enrich the spectrum of flavours and aromas of the honey.
The colour of Mel d’Eivissa can vary from light to dark amber, and it is always clear with no visible impurities. Its aroma is medium-strength, with fresh floral notes and sometimes notes of camphor. The viscosity of this honey can range from medium to high. It is predominantly sweet-tasting, sometimes with acidic overtones and leaves the palate feeling refreshed.
