Can Pere Joan, a brand of the company Procam, captures the true essence of Mallorcan sobrassada using artisanal techniques that uphold the family tradition. Based in Binissalem in inland Mallorca, near the Tramuntana mountain range, its location provides the ideal climate for curing sausages. Procam, a family business built over three generations dedicated to sausage making, continues the legacy of its founder, Pere Joan. Its sobrassada, made with selected meat and Tap de Cortí paprika, is cured in drying sheds where time and temperature control achieve its distinct flavour.
