Mallorcan Gató is a typical Mallorcan cake known for its light texture and rich flavour. Made without flour, this sweet treat is based on a mixture of beaten eggs, ground almonds, cinnamon and lemon zest. The cake has its roots in traditional island baking, where almonds have always been a major ingredient. It is typically served with sugar sprinkled on top and a scoop of almond ice cream to really enhance the delicious almond flavour.

Main ingredients (for 6 people):


6 eggs

250 g sugar

250 g ground almonds

½ lemon (zest)

1 g ground cinnamon


Instructions:


Prepare the tin:

Grease a cake tin with butter and sprinkle flour over it to prevent the cake from sticking to the tin.

Beat the eggs and sugar:

In a large bowl, whisk the eggs together until the mixture is double the volume and has a fluffy texture.

Add the almonds and flavourings:

Combine the ground almonds with the cinnamon and lemon zest.

Sprinkle the resulting mixture over the beaten eggs and sugar, gently folding it all together to so as to not lose any air.

Bake the Gató:

Pour the mix into the cake tin prepared earlier.

Bake in a preheated oven at 180°C during 30–40 minutes, until the cake is golden brown. Poke a toothpick into the middle to check it’s ready: if it comes out clean, the Gató is ready.

Remove from the tin and serve:

Take the Gató out of the tin while still warm.

Sprinkle with icing sugar before serving.


How to Best Enjoy Mallorcan Gató Cake:


This cake goes perfect with a cup of coffee. In Mallorca, it is usually served with almond ice cream to further bring out its almond flavour and traditional character.


Dish Variants:


Touch of citrus: Add a little orange zest for extra freshness.

More spices: If you want a more aromatic touch, an extra pinch of cinnamon or vanilla can enhance the flavour.
