- 1.5 dl. de Olive oil
- 1 copa de Brandy
- 1 unidad de Garlic heads
- 1.5 kg. de Onion
- 1.5 kg. de Rabbit
- 2 unidad de Bay leaves
- 4 ramas de Marjoram
- 4 ramas de Oregano
- 2 cucharada de Sweet Paprika
- peppercorns
- 4 ramas de Rosemary
- Salt
- 2 unidad de Bush tomato

Rabbit with onions is a traditional Mallorcan recipe, much-loved for its simplicity and deep flavour. This stew contains rabbit, a staple ingredient in rural cuisine, plenty of caramelised onions and a blend of aromatic herbs such as oregano, rosemary and marjoram. The brandy and Ramallet tomato add a special touch, making this dish rich and comforting, ideal to enjoy at any time of the year.
Main ingredients (for 4 people):
1.5 kg rabbit, cut into pieces
1.5 kg onions
A generous glass of brandy
2 Ramallet tomatoes
2 teaspoons sweet paprika
2 bay leaves
A few sprigs of oregano, marjoram and rosemary
150 ml olive oil
4 garlic cloves
Salt and peppercorns
Instructions:
Heat the oil in a saucepan or clay pot, adding the chopped rabbit together with the bay leaf and the unpeeled, bruised garlic. Brown the rabbit well, then remove and set aside.
In the same bowl, add the onion cut into half-centimetre strips. Cover and leave to sweat until tender.
Add the paprika and stir well. Then pour in the brandy and flambé until the alcohol evaporates.
Add the grated tomato and fry for a few minutes.
Add the browned rabbit to the pan and add water to cover. Cook on a very low heat to lightly braise.
When the rabbit is tender, add the herbs and cook for a few more minutes to allow the flavours to combine fully.
How to Best Enjoy Rabbit with Onions:
This dish is perfect in autumn and winter, when comforting stews are enjoyed best. Rabbit with onions can be served with good country loaf to soak up the juices, or even with jacket potatoes for a fuller meal.
Dish Variants:
White wine version: White wine can be used instead of brandy for a milder flavour.
A touch of sobrassada: Adding a little sobrassada sausage to the sofrito will add a further Mallorcan touch.
